Chili Sauce

This
is a long-time family favorite. It's a good way to use a bumper
crop of home-grown tomatoes or visit a farmers' market in season.

cups ripe tomatoes (skinned and chopped fine)
3 onions
2 red peppers
2 green peppers
1 cup chopped celery
3 cups sugar
1 1/2 cups vinegar
3 tsp. salt
1 1/2 tsp. powdered cloves
1 tsp. cinnamon
To
skin tomatoes, place in boiling water for a few minutes, then in
cold water and skin comes off easily. A food processor works well
for the chopping. Chop each vegetable separately. Boil all together
in a large pot on low heat, stirring often as it thickens, at least
two hours, until thick. Pour HOT sauce into scalded jars and seal
immediately. Check seal and re-jar if not sealed.
